Sums is pleasantly tangy with a taste of lemony citrus fruitiness and virtually no aroma. An essential ingredient in Middle Eastern cuisine, sumac is used in spice rubs, marinades and dressings, and is also served as a condiment.
The flavor of sumac is quite surprising as the deep red spice is reminiscent of fresh lemon juice. This sweet but sour taste is followed by an astringent powerful punch. While having a diverse flavor profile, sumac still blends exceptionally well with other spices such as allspice, chilli, thyme and cumin.
